The “40” and “60” numbers refer to the number of mesh squares per inch. High extraction (or bolted) flour is whole grain flour with some percentage of the bran sifted out. Great for when you want a lighter loaf yet retain the nutrition found in the germ. It’s amazing how much coarse bran can be sifted out of a few cups of whole grain flour using this simple mesh strainer. It’s a reasonable alternative to an expensive grain mill attachment or purchasing a larger than needed quantity of high extraction flour and risk spoilage before you’re done using it.
